Vanilla Bean Brulee with Sugar Nest
This dish presents as well as desserts from the top restaurants in the country.
Create a sugar nest by caramelising sugar in a pan, drip over a small round bowl and allow to cool. Place over a one third serving of our Vanilla Bean Brulee. Use a warm ice cream scoop to create the perfect round. Garnish around the Vanilla Bean Brulee with fresh slices of mango and fresh raspberries. Cover the dessert with the sugar nest you have made in step 1.
